I don’t know about you, but I love a hearty stew! Quick to put together and something my whole family loves! Here is a great recipe if St.Patrick’s Day 🍀 has you craving a comforting meal!
Irish Beef Stew with Soda Bread
Irish Beef Stew:
Ingredients:
1 lb (450g) stewing beef, cut into chunks
2 tablespoons vegetable oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 potatoes, diced
2 cups beef broth
1 cup stout beer (such as Guinness)
1 tablespoon tomato paste
1 teaspoon dried thyme
Salt and pepper, to taste
Chopped fresh parsley, for garnish (optional)
Instructions:
Heat the vegetable oil in a large pot over medium heat. Add the beef chunks and cook until browned on all sides, about 5 minutes.
Add the chopped onion and minced garlic to the pot and cook until softened, about 3 minutes.
Stir in the sliced carrots, diced potatoes, beef broth, stout beer, tomato paste, and dried thyme. Season with salt and pepper to taste.
Bring the stew to a simmer, then reduce the heat to low. Cover and cook for about 20 minutes, or until the beef and vegetables are tender.
Taste and adjust seasoning if necessary. Serve hot, garnished with chopped fresh parsley if desired.
Soda Bread:
Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
Instructions:
Preheat your oven to 425°F (220°C). Lightly grease a baking sheet or line it with parchment paper.
In a large mixing bowl, combine the all-purpose flour, baking soda, and salt.
Gradually stir in the buttermilk until a soft dough forms. You may not need to use all of the buttermilk.
Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
Shape the dough into a round loaf and place it on the prepared baking sheet.
Use a sharp knife to score a deep cross into the top of the loaf.
Bake the soda bread in the preheated oven for 15-20 minutes, or until golden brown and cooked through. It should sound hollow when tapped on the bottom.
Transfer the soda bread to a wire rack to cool slightly before slicing and serving.
