Quick Recipes: Butternut Squash Soup

If you know me, you know I love a good homemade soup.

A few years ago our garden produced a tonne of amazing squash...butternut, summer, spaghetti, and acorn 😋 Butternut squash soup was a staple in our home for months to come.
.
**This recipe works well with fresh or frozen squash.**
.
Ingredients:
- 2Tbsp butter
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 butternut squash peeled, seeds removed, chopped into 1” pieces
- 4c chicken stock
- salt and pepper to taste
- 1/2tsp each cinnamon, cloves, nutmeg
.
Directions:
1. Soften onions in butter in pot on medium heat.
2. Add garlic and stir, ~1 minute.
3. Add squash and stock. Bring to a boil. Cover and simmer until squash is soft.
4. Add salt, pepper and spices.
5. Using a hand blender, blend until smooth.
