School Lunch Ideas!

Well friends, we are either officially back to school, or will soon be heading back to school! How are you feeling about this? I'm honestly torn. I have LOVED having my kids home for the summer. We've done a lot of fun things, took some time to relax, and just enjoyed summer. (I'm also tired from doing all the things...and am contemplating an earlier bedtime for a couple of weeks to recuperate 😂).

But I also think our kids are ready to see their friends again, get back into routine, and start some of their regular activities.

As we prepare for the school year I begin meal planning again (summer I just go by a wing and a prayer but the rest of the year I try and have somewhat of a plan). School lunches are in that boat. No one wants to eat the same lunch every day so I try and change it up for my kids. And these Bento boxes are seriously amazing — if you don't have one yet at least give them some consideration — this is one way I have been able to work smarter not harder in life!

If you like sending home baked goods, here's a fun and easy cookie recipe that your kids are going to drool over:

Rolo Cookies

Ingredients:

  • 2 cups flour

  • 3/4 cup cocoa

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 cup sugar

  • 1 cup brown sugar

  • 1 cup butter

  • 2 tsp vanilla

  • 2 eggs

  • 48 Rolos

Directions:

  1. Preheat oven to 375 degrees F.

  2. Beat butter and sugars together. Add eggs and vanilla.

  3. Combine flour, cocoa, baking soda and salt. Add to sugar mix.

  4. Shape about 1 Tbsp dough around a Rolo, covering completely.

  5. Place on cookie sheet about 2" apart. Bake for 7-10 minutes until set and slightly cracked.
