Ready in Under 30 Minutes one POt vegetable soup
In the hustle and bustle of daily life, finding time to prepare a nutritious and satisfying meal can feel like an impossible task. Today, I'm excited to share with you a delicious soup recipe that's ready in under 30 minutes, perfect for those hectic weeknights when time is of the essence. Plus, it yields enough leftovers to enjoy throughout the week, making it a true lifesaver for busy families.
Weeknight Soup
ππ―π¨π³π¦π₯πͺπ¦π―π΅π΄:
1 onion, diced
3 celery stalks, diced
3 carrots, diced
2 garlic cloves, minced
3 potatoes, cubed
1 can diced tomatoes
4c chicken stock
2 bay leaves
1tsp parsley
Salt and pepper to taste
1c frozen peas
1c frozen beans
1c frozen corn
ππͺπ³π¦π€π΅πͺπ°π―π΄:
1. Saute onion and celery in 1Tbsp olive oil until soft. Meanwhile, dice carrots and add to onions and celery.
2. Add garlic and cook until fragrant, about 1 minute.
3. Add all other ingredients (I substituted some frozen California mix in place of the beans and corn).
4. Cook until tender and serve with your favourite bread/crackers, or on itβs own!
