Ready in Under 30 Minutes one POt vegetable soup

In the hustle and bustle of daily life, finding time to prepare a nutritious and satisfying meal can feel like an impossible task. That's why having a quick and versatile recipe on hand is a game-changer for busy moms. Today, I'm excited to share with you a delicious soup recipe that's ready in under 30 minutes, perfect for those hectic weeknights when time is of the essence. Plus, it yields enough leftovers to enjoy throughout the week, making it a true lifesaver for busy families.

Weeknight Soup

𝘐𝘯𝘨𝘳𝘦π˜₯π˜ͺ𝘦𝘯𝘡𝘴:

  • 1 onion, diced

  • 3 celery stalks, diced

  • 3 carrots, diced

  • 2 garlic cloves, minced

  • 3 potatoes, cubed

  • 1 can diced tomatoes

  • 4c chicken stock

  • 2 bay leaves

  • 1tsp parsley

  • Salt and pepper to taste

  • 1c frozen peas

  • 1c frozen beans

  • 1c frozen corn

π˜‹π˜ͺ𝘳𝘦𝘀𝘡π˜ͺ𝘰𝘯𝘴:

1. Saute onion and celery in 1Tbsp olive oil until soft. Meanwhile, dice carrots and add to onions and celery.

2. Add garlic and cook until fragrant, about 1 minute.

3. Add all other ingredients (I substituted some frozen California mix in place of the beans and corn).

4. Cook until tender and serve with your favourite bread/crackers, or on it’s own!
