Comfort Food Scalloped Potatoes

As the weather becomes chillier, my food brain turns from BBQ and salads to comfort foods. Do you do this, too? (Maybe it’s the Ukranian survival instinct in me). And one of our family favourite comfort foods is scalloped potatoes!

Shortly after Trevor and I got married I came across this scalloped potato recipe and it honestly was so good I haven’t looked at another recipe since. (And just a heads up — if you have a big family, this is one of those recipes you’re going to want to double up on so that you for sure have leftovers!)

Ingredients:

  • 5 large potatoes, sliced thin

  • 1 onion, sliced thin

  • 3Tbsp butter

  • 1/4 cup all-purpose flour

  • 1 3/4 cup chicken broth

  • 2 Tbsp mayonnaise

  • 3/4 tsp salt

  • 1/8 tsp black pepper

  • paprika

Directions:

  1. Preheat oven to 325 degrees F.

  2. In a saucepan, melt the butter; stir in flour until smooth.

  3. Gradually add broth, mayo, salt and pepper, and cook for 2 minutes or until thick and bubbly, stirring frequently.

  4. In a greased baking dish, layer potatoes and onions.

  5. Pour sauce over potatoes and sprinkle with paprika.

  6. Cover and bake for 2 hours, or until tender.
